Hanah Glasse, History and Recipes   by Dyfed Lloyd Evans

Hannah Glasse is a crucial writer in the history of cookery books. Her volume: The Art of Cookery Made Plain and Easy represents the first cookery book intended for the ‘common man’, or, in fact for the instruction of new house servants. As such it is both comprehensible and actually reads well, almost as if you were being guided in preparing the dishes. Previous cookery books all tended to be written for experts and assumed a considerable knowledge of how to prepare dishes and basic components.

Hannah Glasse, herself, was born in London in March 1708, the illegitimate daughter of Hannah Reynolds, a widow and Isaac Allgood, a landowner of Brandon and Simonburn, both in Northumberland. She was christened at the church of St Andrews, Holborn, London, but she was raised at Allgood’s home at Simonburn near Hexham, together with his legitimate children, Lancelot and Isaac.

In 1724 Hanah married an Irish soldier, John Glasse at Layton in East London. Upon the death of her father, Hannah’s mother cheated her of her inheritance and it very much appears that it was money that was the dirver for Hannah Glasse to write her book and in 1746 she wrote to her aunt, Margaret Widdington, telling her that she had begun work on a book entitled The Art of Cookery. When her book was published by subscription in 1747 the first print run of 202 (made available through Mrs. Ashburn’s China Shop in London) was eagerly snapped-up. The Art of Cookery Made Plain and Easy as Glasse’s book was entitled provided simple instructions for low-cost fine dining. It became an instant success and transformed the lives of the emergent professional classes.

In 1747, Hannah’s husband, John Glasse, died. Subsequent to this Glasse seems to have set herself up as a ‘habitmaker’ or dressmaker in Tavistock Street, Covent Garden, in partnership with her eldest daughter Margaret. However, Glasse’s wealth and success were not to last. A succession of poor decisions led, in 1754 to her being declared a bankrupt and entering debtors’ prison. She was rescued by her brother, Lancelot, but during the proceedings she was forced to sell her shares in The Art of Cookery.

Unfortunately, it did not take long for Glasse to fall into dire financial straits once more and on the 22nd June 1757 she was consigned to the Marshalsea debtor’s prison from where, in July 1757, she was transferred to Fleet Prison. She was free by the 2nd December 1757 when she registered three shares in The Servants Directory, a new book she had written on the managing of a household. Unlike the The Art of Cookery this book was never a commercial success, nor was her third and final book, The Compleat Confectioner, published in 1760.

Hannah Glasse died on the 1st September 1770 and her passing was marked by the London Gazette. Apart from the wit and clarity of her writings, Hannah Glasse and her Art of Cookery will always be remembered, for this book contains the first English recipe for an Indian-style curry that was to be accompanied by boiled rice.

Hannah Glasse’s recipe book also represents the transition point between medieval forms of cookery (that had persisted until the 1700s) and the modern styles of cookery we know today.

Below is the recipes for Hannah Glasse’s version of the original pound cake:

To make pound cake

Ingredients:
450g butter
6 whole eggs
6 egg yolks
450g plain flour
450g sugar
2 tsp baking powder (optional and omit for an ‘authentic’ version — baking powder was not invented until 100 years after this recipe)
2 tsp caraway seeds, lightly crushed

Technique:
Bring the butter to room temperature then place in a bowl and beat with an electric whisk until pale and creamy (originally a wooden spoon or large ballon whisk would have been used, but as the raising of this cake is dependent on incorporating lots of air in the batter, this would have required plenty of elbow grease). Now add the sugar, a little at the time and beat into the butter until pale and creamy.

Add the eggs into a separate bowl and beat with your whisk until pale and very frothy (incorporating air into the eggs is what makes this cake rise). Add the eggs, a little at a time into the creamed butter, working thoroughly to combine after each addition. Beat the eggs and creamed butter mix thoroughly together then add the flour a little at a time, mixing thoroughly to combine as you add. Finally add the caraway seeds and fold through the mixture (along with the baking powder, if using). Beat well for 20 minutes with an electric whisk to aerate the mixture then turn into a cake tin that’s been greased and lined with greaseproof (waxed) paper.

Transfer to an oven pre-heated to 180°C and bake for about 75 minutes, or until browned on top and cooked through (a skewer inserted into the centre should emerge cleanly). Allow to cool in the tin for 20 minutes then turn out onto a wire rack to cool completely before storing, or slicing and serving.

Hannah Glasse made a huge contribution to modern cookery and it is only right that this remarkable woman be regognized and lauded for her achievements.

Biedermann Sons H3001 Amazonia Floating Candle Bowl $34.43 More than 800 years ago the village of Schwaebisch Gmuend was founded by the Kings of Staufen who were responsible for settling this region known for its artisans specializing in the production of gold silver and brass jewelry as well as decorative ornaments. These works of art were shipped to markets in Italy and Western Europe. The tradition in metal arts survives today in this medieval walled town located near Stuttgart Germany. For generations families have engaged in ornament cutting designing their own unique decorations to give friends and relatives as gifts during the holiday season. The Biedermanns originated the creation of a single Christmas ornament commemorating each year drawing on the talent from this region. In the fall of 1970 we contacted several artisan families who among them designed and cut the first ornament which depicted the town square of Schwaebisch Gmuend. Since that first edition each year a group of artists has selected a single design from those submitted by the townspeople and the ornament to be cut for the coming season is chosen. This is now a tradition that the people of Schwaebisch Gmuend and America cherish. Designs through the years have been selected from those created by school children and adults. The Kahero Farm is just about 10 miles north of the Equator in the Great Rift Valley. It was a forest many years ago where people cut down trees for firewood and charcoal. The new owners of the farm saved the brown olive (Olea Africana) stumps of trees that were cut down decades earlier and taught the local herdsmen to carve bowls and spoons from the aged wood. No two bowls are alike. Every bowl is made according to the grain in the wood. The only power tool involved is a chain saw used to cut the stumps into workable pieces. After that, the carvers use machetes, chisels, and other homemade tools, some made from old harrow disks. The bowls are finished with broken glass bottles and sand paper and are then dipped in liquid paraffin, which protects the beauty of the wood. What is Worldstock?
